While it's neither Korean nor Italian, Kimchi Pasta captures the spirit of both cuisines, and like most great pastas, it relies on just a handful of simple ingredients to imbue the humble strands of pasta with a deceptive amount of flavor.

Ingredients

  • 160 grams spaghetti
  • 1/4 cup kimchi juice (squeezed from kimchi)
  • 1 tablespoon gochujang
  • 1 tablespoon olive oil
  • 7 grams garlic (1 large clove, minced)
  • 150 grams pork belly (thinly sliced and then cut into strips)
  • 110 grams squeezed kimchi (~1/2 packed cup, chopped)
  • 3 thin scallions (cut into 2-inch lengths)
  • Parmigiano-Reggiano (for serving)

Instructions

  1. Bring a large pot of salted water to a boil and boil the spaghetti for 1 minute less than what the package directions say.
  2. Make the kimchi pasta sauce by stirring the gochujang into the kimchi juice until there are no lumps remaining.
    Kimchi pasta sauce is just gochujang mixed with kimchi juice.
  3. About 5 minutes before the pasta is done, add the olive oil and garlic to a frying pan and saute over medium heat until the garlic is very fragrant.
    Make the kimchi pasta by sauteeing some garlic in olive oil.
  4. Add the pork belly and spread it around the pan, stirring occasionally until it's mostly cooked through.
    Fry some pork belly before adding the kimchi.
  5. Add the kimchi and saute until it's fragrant and starting to brown.
    Stir-fry the pork belly and kimchi until the kimchi has browned.
  6. When the pasta is done drain it, add it to the pan with the kimchi, along with the sauce and scallions. Toss to coat evenly. The kimchi pasta is done when there is no liquid left at the bottom of the pan and the noodles are evenly coated.
    Finish the kimchi pasta by adding the scallions and sauce and tossing to coat evenly.
